I'll never stop baking and I'll never stop eating them either :) My family sometimes scolds me for baking these delicious treats, but they gobble them up!
Here are some recipes from my book...
Beat the eggs and sugar until pale, about 10 minutes, but don't let it become glazed. Then, add flour and a pinch of baking soda, and beat until smooth.
Cut the apples into small pieces (cubes) and sprinkle them into the batter.
Preheat the oven to 180°C. Grease a baking dish generously with butter.
Pour the batter into the dish and bake for 40-50 minutes at 170°C. When done, do not open the oven for the first 15 minutes, then carefully open it and immediately cover with a napkin or kitchen towel to prevent the pie from sinking.
Ingredients:
Sift the flour and baking soda. Combine the sour cream, sugar, and salt and mix thoroughly. Add the egg and beat with a mixer. Combine the softened butter with the sour cream and egg mixture. Add the sifted flour and knead the dough. Add a little more flour if necessary.
Roll out the dough to a thickness of 7-8 mm. Cut out circles with a diameter of about 10 cm (a wide circle).
For the filling, beat the egg whites with sugar, then add the cottage cheese, sour cream, and flour. Place a teaspoon of the cottage cheese filling on each half of the dough, and then combine the halves. Brush the sochniki with beaten egg yolk. Bake in a preheated oven at 220°C for 30 minutes.
Ingredients:
Mix the yeast, flour, dry milk, and salt. You can sift the flour. Pour in the butter and water. Knead the dough with your hands until it becomes sticky. Knead in a bowl for 4 minutes, dusting your hands with flour as needed. Cover with a towel and leave in a warm place for 1 hour, until the dough rises, double in size.
Place on a floured baking sheet. Shape into a long loaf, cover with a towel, and let rise for 45 minutes.
Preheat oven to 200°C and bake for 20–25 minutes, until pale golden.
Or, in a convection oven at 180°C, bake for 30–35 minutes. Cool.
Ingredients:
Crack the eggs and add salt to the bowl. Whisk. Pour in the milk and combine. Add the flour. The batter is ready. Take silicone muffin tins and fill them halfway with batter.
Preheat the oven to 230°C. Place the buns in the oven for 15 minutes. This is when they start to pop out of the pans! Then reduce the heat to 180°C and bake for another 10-15 minutes. You can cut a slit in the bun and place a piece of butter or something else inside.
Ideal for breakfast, they resemble profiteroles.
